I initially bought a pound of the L.D. Carlson Amylase Enzyme early in 2021. For a 20L batch, just a small amount is needed. The Amylase powder is very, very fine, so I cut only 1 corner of the bag open - just enough for a small measuring spoon. After each use I re-sealed it, and stored the package in a thick poly freezer bag. This is a biological additive, and being inexperienced I did not know what the shelf life would be. I have been sharing ingredients that come in larger batches with friends, so when the 1 pound size went on sale recently, I ordered a fresh bag. The Amylase Enzyme was delivered in one of Amazon's new brown paper envelopes. I'm not sure if what I found next was related to that packaging. In any case, when I slid my finger under the paper envelope's flap, it opened and spouted out quite a bit of the very fine powder, without my even reaching into the package. The Enzyme is much finer than, for example, baby powder, and just opening the flap let out quite a large cloud. Since I had lifted the glued paper flap with my finger (rather than opening the package with a knife or scissors), it was a surprise. I didn't try to remove the inner plastic bag and do a "post mortem." I closed the paper flap, but taping it shut was difficult. After that, I had fun cleaning up the Enzyme powder. I contacted Amazon, and they were very helpful. They offered a full refund, and I was not asked to try and repackage the order and return it. I will re-order, and hope that this was a one-time problem. Full marks to Amazon Customer Service for their prompt support. I don't know if the inner plastic burst because of the brown envelope being squashed, or if that plastic bag simply had a faulty seal. I've never encountered a similar issue with Carlson ingredients. As to the Amylase Enzyme used in the 2021-2022 batches, it worked well for me, and for friends who shared that package. No complaints at all about that.
