Q: Are these good for foundation paper piecing, or would you be better off with an ‘add a quarter’ ruler?

You'd be better off with the add-a-quarter ruler for foundation paper piecing. The add-a-quarter ruler was designed safely trimming seams while paper piecing. These omnigrid rulers are just 1/2" wide, and are intended for marking, not rotary cutting. I love these for marking, and I love my add-a-quarter for trimming while paper piecing.

Q: Does this have a quarter inch ridge on the back?

No, but there is a line down the center that would help you measure 1/4 inch. I use this for marking the seams for making multiple flying geese at the same time. They are handy but I do not think that they would replace the paper piecing ruler with the raised 1/4 in on the side.
