Very neutral flavor, can't even taste it, but thickens extremely well. A little bit goes a long way. Between this and the emergence of commercially available phycocyanin, ambitious cooking and mixology experiments with natural ingredients is becoming pretty dynamic. One bit of advise, I'd make sure to use some kind of high speed blender, at least for the initial introduction of the carrageenan to liquid, because it likes to clump. The clumps will eventually dissolve, with enough whisking, but high rpm makes it a non issue.

Lambda carageenan got here quickly, and worked beautifully. I used it to make a size for marbling. Good stuff for us artsy marbling types, not just good for chefs that make artsy food. Hey, why don’t you chefs marble on your food? It would look cool if you could pull it off.

I don't know the ratio of Lambda Carrageenan to water to use to make the gel-ish Carrageenan product. I would appreciate any information you can give me about that. Thank you.
