What is the diameter of the stainless probe?

My dig caliper says 5.95mm diameter for metal probe, slighly bigger for the rubber/heat shrink above it.

What is the output voltage range?

There is no output voltage as these are thermometers and not probes. Respectively you can plug them into both 5.5v and 3v.

What are the maximum and minimum operational temperatures for this product?

The interweb says Wide temperature range of -55 ℃ ~ +125 ℃ I am not sure I would test those extremes

Has anyone tried using these with a PLC?

No it did not with the one I purchased.
