Would it hold an 11x14 poster?

Indoors would work well with 2, but outdoors a slight breeze that size poster will fall down. An easel for this size sign would work well. Outdoors I used with 8" x 6" signs.

will this fit inside a standard mason jar?

It will, but you have to squish it a bit to get it in a regular-mouth canning jar. The were harder to get out than in for me and I deformed a few of the a little when taking them out. (They can be bent back, though.)

Will this hold my 5x7” table numbers (130 lb card stock)?

Yes, it will. I use them to hold about the same size table numbers for groups in my classroom.

would these be sturdy enough to display a postcard?

It depends on how big your postcard is, usually 5*8 inch or less is fine
