When it was first published, Japanese Cooking : A Simple Art changed the way the culinary world viewed Japanese cooking, moving it from obscure ethnic food to haute cuisine. Twenty-five years later, much has changed. Japanese food is a favorite of diners around the world. Not only is sushi as much a part of the Western culinary scene as burgers, bagels and burritos, but some Japanese chefs have become household names. Japanese flavors, ingredients and textures have been fused into dishes from a wide variety of other cuisines. What hasnโt changed over the years, however, are the foundations of Japanese cooking. When he originally wrote Japanese Cooking : A Simple Art, Shizuo Tsuji, a scholar who trained under famous European chefs, was so careful and precise in his descriptions of the cuisine and its vital philosophies, and so thoughtful in his choice of dishes and recipes, that his wordsโand the dishes they help produceโare as fresh today as when they were first written. The 25th Anniversary edition celebrates Tsujiโs classic work. Building on M. F. K. Fisherโs eloquent introduction, the volume now includes a thought-provoking new Foreword by Gourmet Editor-in-Chief Ruth Reichl and a new Preface by the authorโs son and Tsuji Culinary Institute Director, Yoshiki Tsuji. Beautifully illustrated with eight pages of new color photos and over 500 drawings, and containing 230 traditional recipes as well as detailed explanations of ingredients, kitchen utensils, techniques and cultural aspects of Japanese cuisine, this edition continues the Tsuji legacy of bringing the Japanese kitchen within the reach of Western cooks. Nice book with plenty of details.
Writing from the famous cooker, he was written by a patient and delicate cooker. It's easy to follow and it is mixed with knowledge of the Japanese culture. Very recommendable if you are looking forward a real entrance to Japanese cooking. I've read this book before coming to Tokyo where I have received 7 cooking lessons in the Buddha Bellies Cooking School in Tokyo. They perform cooking lessons four tourists in perfect English and I really recommend having these experience. Well it's up to you!. They were whom recommended me this book. However, they have a wide selection of books, and then other more specific book could be recommended there. You can see a picture of me at: [...]

An amazing book
It was very different than I thought it would be. If you're expecting a classic cookbook, you'll be disappointed. There's a lot of gorgeous recipes, but, e.g., almost no photos. This is more a book about Japanese cuisine than a cookbook. If you want to truly understand Japanese cooking, the techniques, ingredients etc, then this is the right book for you. I am loving it.

Real japanese Cooking
This book is amazing. After returning from Japan I was struggling to find good Japanese food. The only way to do this- it to cook your own and this book really helps you to do so. It is more than just a collection of recipes- it explains a bit a bout the food philosophy too. All the basic techniques are explained with simple drawings.
