Can the blade be sharpened?

Yes, you use a whetstone to sharpen it or a Steel to hone the blade between sharpenings. Mine wasn't very sharp on delivery, so will need to be sharpened on a whetstone before it's usable

The blade is relatively thin and slightly flexible. Flexible enough to bend and slice smoked salmon if need be.

It is 12" for just the blade and does not include handle

Is this product dishwasher safe?

To be honest I would never place any of my sharp knives in a dishwasher as it is known to damage their edge.
