To be honest no it wouldn't the steel is so soft (really bad heat treatment) that the cheese cake is likely harder then the steel lol. But for real the RHC on this "440" (I doubt it is 440, it's likely 420 or 3CR13mov. I can tell by how they feel on the stones that there is very little carbon in this steel) tested at below 53hrc (I have a set of calibrated files that range from 70HRC down to 53HRC its 32 files so you can test in half HRC increments. If the file won't scratch the steel then the steel is harder then that file so you can tell the HRC within .5HRC) the 53HRC file scratched it instantly. My guess is it's either not heat treated and just in the same state the plate steel comes in or if it is heat treated its taken no where near the Temps that the steel hardens.
When sharpening these knives the steel is so soft that the burr will just get bigger and bigger as you remove metal as it just flops from side to side as you change sides on the stone. Diamond stones dig in and remove steel so quickly. My 11 micron Shapton glass stone was cutting this steel like crazy and that stone will leave a mirror edge on any decent knife steel yet it was cutting this and removing metal like 150 micron stone would on a good steel with a good heat treat. As I said it's so soft trying to sharpen it on even a 600 grit diamond stone (600 grit will leave a fairly fine edge, about like a true 1500 grit whetstone Finnish) it just digs in and grabs because the diamonds are cutting so deep in to it and with only very light pressure. To be honest even 5 dollar box stone folders have better blade stee then these knives. Again I believe the knifes blade was in a unhardened state/aneled. If you did a Hrc test on it I would be willing to bet its around 50hrc. To put that in perspective, T6061 aluminum will HRC at around 52 and its butter soft.
