Fabulous for carving
I have started replacing my old (25 years) kitchen knives with Wusthof knives. All of them have been a delight, but this one is truly magnificent. I have discovered that with a knife this good I am MUCH better at carving meat and poultry than I thought I was.

Would not trade this knife even for a day off.
I have been working in a professional kitchen for two years now and serving 270 meals a day. I used other knives in the kitchen and I would not trade my Wusthof knives even for a day off. The 10 inch carver is the most recent to my collection. One word BEWARE, this knife is so sharp it will cut you just by looking at it. It glides though cuts of meat with ease. The most tedious of slicing chores is rendered enjoyable. for such a thin blade it takes and keep an edge like no other and I am not a master knife sharpener by any stretch of the imagination. I have to to purchase and use a Wusthof blade that I am not 100% pleased with.

Best knife for cutting meats I have ever used. Strong but flexible for carving thin, uniform slices from a roast or turkey or ham. long blade good for larger turkey's.

It's a Wusthof, what else needs to be said
Wusthof quality, nice knife. My only complaint is the I have very large hands and the handle is a little small. Other than that, it's a nice knife and looks great when running an action station.

Meat slicing made easy
Picked this knife out from about 10 different types of meat slicer. Went with this one based on quality of other Wusthof knives we own. I’ve now slides cured meats and tri tips / briskets with them. The knife allows you to consistently slice as thin as you want. My wife loves super thin slices for steak sandwiches and this knife delivers. Totally recommend for those serious about knives and consistent food prep.

Another Wusthof added to the collection
As with all Wusthof knives, extremely sharp (and easy to sharpen) and I LOVE the classic series. Prices are high and it SHOULD include the Wusthof 10" blade guard, but it doesn't. However, I can't complain about the fit, function, and looks. Now, if I can just get them to come down on the price of 4 scalloped steak knives :)

happy that I went with Wusthof
I was looking for a good knife for slicing smoked meat, and this one has done the job perfectly. It's long enough that it creates a nice line when separating pork ribs. It's not so ridiculously long that it doesn't fit in a kitchen drawer (but of course does not fit in a knife block).

Half the size for more money
I had the exact knife for over 10 years till my wife used the handle as a hammer. I ordered this replacement and find that they now make it with a blade that is at least a third smaller in width (not length). It's so light I have to keep a book on it so it doesn't blow away.

Very sharp and flexible. Perfect for cutting round the bones on a ham shoulder but also went through a ribeye of beef like butter. Minor quibble is that for the price a more durable sheath would have been good, not least because it is lethally sharp.

Wusthof non lo sto scoprendo oggi (ho quasi tutta la raccolta di coltelli...) e nemmeno di diversi Chef, ma questo coltello a lama lunga alveolare e flessibile è il massimo per tagliare ad esempio prosciutto crudo... Volendo essere sincero: meglio delle migliori affettatrici...!!!!!!!!!!!!!!!!! E tutto detto...

Bien adapté pour découper du jambon en fines tranches. Lame souple et très tranchante.

Ein klasse Schinkenmesser das keine Wünsche offen lässt! Es ist nicht flexiblel biegsam, sondern mit fester scharfer Klinge mit Kullen die den Gleitwiderstand durch das Schneidgut zusätzlich verringern. Das Abschneiden von feinen Scheiben von Schinken, Lachs, Obst und Gemüse gelingt damit äußerst genau und gleichmäßig dünn.
