Can this be used on real fresh roses?

YES! To safely apply on fresh flowers mist the spray from about 15" from the bloom. Just for Flowers is transparent dye. When you apply additional coats of transparent color the hue will deepen. You can control the color value from light to dark by how many coats you apply. Avoid one heavy coat but rather build up to the color value desired. Let the surface dry between coats. But no worry, it dries fast!

Do these leave a harsh spray paint smell?

You don't want to breath in the fumes and yes, there is a smell but it fades after a while.
