About how much water does it take to make one sphere? And would these work for jello balls?

The balls are about the size of a shot glass. They won't fit into a shot glass though. I would guess 5-6 tablespoons of liquid. And yes, it should work for Jell-O shots, since the seal is pretty good. But I would use a syringe to squirt the liquid into the ball, instead of trying to pour it in lthrough the little hole at the tops.

Do the trays leave any odd after taste in the ice?

My ice tray has a bad smell that leaves the cubes tasting bad and unusable

Would this work to make tempered, chocolate spheres?

Sure. If you want to temper chocolate, you need a mold to give it the right shape so that it hardens fast and not become crumbly. This ice tray is flexible as it is made of silicone material and is able to withstand high temperature therefore you can use it to mold tempered chocolate spheres. However, please note that even though you can pour hot chocolate on it, it is not advisable to subject the ice mold to direct heating.
