When the mount is fully retracted (when the monitor is pushed all the way against the wall), how much space is between the wall and the monitor?

The distance from the wall to the mounting plate in fully retracted position is 85mm (3.36 inches) there is a detailed measurement on this product page. This is also shown on its production page's last image (ASIN B01EKUZCKS). Hope this helps.

Is it wobbly or very stable? We need an extension for a full motion flight simulator and might use this if the arm stays firm.

Very firm. It should suit you well
