Short expiration date
Purchased this for some cheese projects I have coming up. The expiration date is 4/2024. That is such a SHORT date- haven’t used the product yet so can’t comment on it specifically. Update to original review. Moved from 1 star to 5. I have not put the product into used, however, the company responded to my concerns promptly and offered a satisfactory resolution. While I have still not used the product, I am much happier.

Trust and know what you are buying.
Based on my experience, I would only get my cultures and ingredients from them. You always know exactly what you are buying.

The picture is not what I got.
The picture is not what I got. Different label and this says sharp in ad, what I received says very sharp. It may be the same product or from the same origination manufacturer, just saying, what I received was not what was pictured. From that, it looks like lipase, however, I am not going to do a taste test between mild lipase and "very sharp" lipase, and as that I am using it in cheese. It will be some time before I taste the cheese made with this. My 8 month parma-ish cheese, as that I follow a parmesan/romano recipe which I vary culture times, rennet set times, gotta play, has been good with the mild lipase. Though now that I have the sharp, I would like to branch out of the thermophillic and into some of the mesophillic culture cheeses.
