Can I just hook the red wire up to my vehicle's reverse trigger wire so it only receives 12v when the car's in reverse?

The camera seems to work just fine like this. If yours has an auto dimming or glare reduction it will require the +12 to go to an accessory powered circuit in order for that to work properly.

What button do you push to toggle between two cameras

There is no button to toggle. There are 2 inputs. Video, and Reverse. The reverse footage will come on any time that source gets input. Generally, you attach the reverse camera to your Reverse lights power, so the camera powers on(and in step, the screen) when you are backing up. When the reverse camera is on, you can press the power button on the mirror to turn on your "Video" input.
