Not what expected
As a "Bakery School" I would have expected more information in detail about basics like various kinds of grains, their different effects on producing dough, what to avoid, etc. There are definitely better bread baking books available.

As close as you can get from actual class
I've attended an 8 week Boulangerie workshop a few years ago at LCBKL, I'm so glad that they've released this book finally, great recipes, easy to follow. Highly recommend this and the Pastries, Chocolate book too.
