You can detach the cube/box very easily and then fold up the cart. It is very handy. You could also just put the cube in a regular shopping cart and use the cart when you get home. You can buy an extra cube to use on the bottom too. Lots of options. I love my cart.

What is the turning radius of the front wheels?

Turning radius? Not exactly sure what you mean, but the wheels are "free" wheeling. They will turn however much you turn them. Maybe with a heavy load, turning may not be as easy, but you can spin them around easily in a grocery aisle. Handling and maneuverability has never been a problem for me.

Can you roll this at and angle on the back two wheels, like a handtruck? Will the crate fall off?

The crate will not fall out if you roll the trolley only on the back two wheels.

How easy is this for grandma to fold & unfold?

Pretty easy. In the handle, there’s a button press the button and it opens and closes.
