What is the difference between the classic barge all purpose cement in the yellow & red can and this barge infinity cementin the green and white can?

Barge Infinity is the next level of adhesion beyond Barge Classic Cement. I use it in Leathercraft & jewel affixing on multi medium projects.It is very very permanent. Dries rapidly. Dries clear. Pliable.It is truly the best adhesive I've ever found.

is it waterproof? is it thick?

Yes, it is waterproof and it is as thick as you want to make it using layered application and thinner if necessary

Does it work well with suede? And will it bleed through fabrics?

Do not buy it. It was a waste of my money. I followed the instructions exactly and it didn’t work for me. I wish I could get a refund for the can. To answer your question, I used it on some suede Jordan’s and it will ruin your suede if the glue comes in contact with it.
