Will this product work well on lego's?

Yes but you will never be able to disassemble the Lego

Is this single use or can it be used multiple times. Many say they are, but in reality you usually have to throw it out after you have used it.

Multiple times as long as you keep cap on. I have used this product for decades and it will never dry out unless you leave cap off. Just take off cap and it is ready to go. Made for plastic model kits.

I lightly sand on models where glue spreads out.

A 2 part epoxy will do...very strong glue for about anything.
