how long can the dough balls be stored in the box for ?

I use these for the second proving which takes a hour. However if you use it for slow proving in the fridge this can be stored for up to 72 hours

Do they make a smaller pizza dough proving box

Not really, once I have proved and cut into balls, they fill in nicely If you were not going to put the lid on, then yes you could prove them in the box
