Is the edge only used for sharpening or the “mirrored” flat area as well?

The edges on one side are for producing a sharp edge. The edges on the other side are for producing a finished edge. This product works well and is easy to use. You don't use the flat area. You sharpen on an angle and use the edges. The product comes with pictures and directions.

Reviewer said need some experience to sharpen like pruners with a handheld tool? Another said no info on how to use it for pruners clippers etc?

I just became a widow n learning so much but I have to tell everyone this tool is excellent. It sharpens pruners, scissors u name it, it sharpens .

Could i sharpen blades on blenders

If you can maneuver the tool, which is definitely maneuverable, around the edges of the blades, I don't see why not. I had not thought of sharpening blender blades, but a blade is a blade, is a blade. The tool handles garden pruners, scissors, etc. so it is possible. Be careful maneuvering around those smaller blades.
