Will this monitor accept 2.1 hdmi to pick up the 120hz from ps5?

This monitor only has HDMI 2.0 (HDMI1) and HDMI 1.4 (HDMI 2 & 3).

Will this monitor run the 120hz that the PS5 puts out?

Unfortunately No. The pS5 and Xbox Series X achieve there refresh rates from a HDMI 2.1 port. In theory you SHOULD be able to achieve 1080p 120fps from the Xbox/PS5 if you go into the Hdmi 2.0 port on the monitor. The other ports will limit you to 60fps
