How does acoustic electric differ from just acoustic? Is the sound equally good for both acoustic and electric functions?

The acoustic/electric has the cutaway (easier access to upper frets). There is no structural difference other than that and the tone will be really similar to the acoustic-only FG800. (Changing picks would make a bigger difference!)

Has anyone ever considered changing out the electronics with Fishman? I cannot get this guitar loud enough through amp. Have to run amp full....

I haven't. I get enough volume for my taste with a 20W Fender amp, or even a 5W Spark Go.
