How do I connect this to an Uno? The photo show the shield connected (apart from the VCC and GND) to digital pins 8-11, GND and AREF. Correct?

Does anyone know what light wavelengths this will pick up? I'd like to capture visible as well as infrared images.

Our default lens only pass visible light, if you need both visible and infrared light, you need to choose other lenses, http://www.arducam.com/downloads/Lenses/HX1820.JPG we can use this lens without IR filter

How many frames per second can you get with this camera? (I'm not necessarily going to use an Arduino)

I haven't got specific measurements yet, but the real limit isn't frames per second but your data throughput. At a lower resolution a frame appears to be well under 10 ms (i.e. something over 100 fps) - you can only read data out of the FIFO buffer at 1 byte per 12 microseconds or so according to the sample code, so that would give you a hard limit from the module itself.
