The capital are maybe an inch and a quarter to an inch and a half. They are easy for little fingers to manipulate.

Do these stick on stainless steel appliances?

It would depend on the type of stainless steel they used. Higher quality stainless has much more chrome, and less iron. Lower quality stainless has higher iron, and less chrome. Basically, try another magnet. If it sticks, there is enough iron to use them.
