Can I put these in a zip lock bag, and store in room temperature, or in the fridge?

I believe you can. I put mine in a Lock and Lock (plastic container like Tupperware) and left them on the counter. I use the toffee bits to make Englis Toffee ice cream and they have kept their flavor and crispiness.
