Excellent for huancaina, mix with boiled potatoes like in a salad, scrumptious.

I had a takeaway pizza which used amarillo chilli as a base sauce, and wanted to try it on recipes at home. So far I have only used it on pizza, which was really nice, but I am sure it will go well with all sorts of meals. It is not like any other chilli sauces I have tried, and has its own unique taste, not too hot or mild. I will be looking up Peruvian recipes to try.

Bought this to make lomo saltado, to bring back memories of Peru. It is a little pricey but the dish was delicious!

I bought this to use with peruvian stews, and to make huancaina for potatoes. But I now also use it with fish, it pairs well with miso, with green vegetables, with eggs, I just keep running out!

I had high hopes for this Aji Amarillo paste, but it was a huge letdown. There’s no aroma when you open the jar — just a faint vinegary smell. The flavor is flat and watery, and there’s zero heat. It doesn’t taste like real Aji Amarillo at all. The texture is thin and diluted, almost like it’s been stretched with vinegar or water. If you’re looking for that rich, fruity chili flavour Aji Amarillo is known for, this isn’t it. Unfortunately, I bought the 2-pack, so now I’m stuck with a second jar I’ll never use. Not worth the money. Would not buy again.
