i see this contains calcium hydroxide/ this is listed as a hazadous material on osha/ why is this used?

What's actually in this product is something commonly known as "limewater", which is a solution of calcium hydroxide mixed into water and very diluted. It is commonly used for some food preparation purposes. For konjac noodles, the calcium hydroxide solution helps hold the konjac mixture together to allow it to be sliced into noodles. What you're looking at with OSHA is the pure powder form, which it looks like it can indeed be hazardous. There are many substances that are safe when diluted but dangerous in pure form. Limewater's use in the konjac noodles here is considered safe :)

Are these chewy like normal shirataki noodles or is it a softer texture like an egg noodle?

This was a perfect compliment to my chicken alfredo with green bean recipe - Within the casserole, the noodles were perfect without all the carbs! It is a cross between a normal shirataki noodle and an egg noodle texture

Are yuho noodles made in peanut free facility?

Back of packaging states “processed in a facility that also processes soybean products”. You may want to contact the seller directly.
