Best kitchen knife I've owned
I like the Mercer knives like this. I have a variety of them. This is and the thinner boning version are my favorites. They hold their edge, survive the dishwasher, and have excellent control while cutting. Not sure what else I could want. I have all the others.. Henkel, Shun, etc. and these Mercer knives are by far the ones I use for 95% of my kitchen cutting. I cook regularly and I use this knife in particular every day. I bought 2 more as replacements.

Better than most wusthof and henckels
Came across these while browsing thru amazon. Thought I'd give em a try. I'm a Professional chef for over 2 decades and own 100+ knives from order made in Japan to your regualr shun, wusthof, global, yoshihiro to the cheapy ikea and amazon basics. In most of the cases you get what you pay for. This mercer(and another flex 8" I bought) are surprisingly good. First off you will NOT find anything even close to these when it comes to the value. Sure they're not fancy looking or fold-forged or 62 HRC, but they do what they're designed to do and very well at that. It's full tang and holds sturdy while butchering and carving. Secondly, The bevel is angled correctly and holds up pretty well in a commercial kitchen. The body of the blade is also at a good thickness and feels good to hold. My only complaint is that the handle is slightly bulky and has a weird curve. This is not very noticeable when cutting normally, but during back hand holds(for butchering) is a bit awkward. In conclusion, there are many new brands on amazon trying to dethrone the classic giants. Claiming they use Japanese/German steel that have super mineral composition. But if you read the fine print they are just mass produced in China factory. Mercer, while made in Taiwan, comes at a much better price point and while not fancy, performs on par or better than most name brand knives. To the pros, IMHO, these are better than W classic and H four-star.

Works great.
This is really sharp. My only wish is that it came with a hard plastic cover over blade for safer drawer storage.

Great low cost knife
Excellent knife for trimming big cuts like brisket, pork shoulder, etc… and cheap enough that it’s no big deal if it hits the floor and breaks.

Got this for some trimming and this knife is fantastic. I wanted something cheap I didn't have to worry about and it's much better than I had guessed. It's not pretty, that's true, but it comes extremely sharp, works really well, and has a somewhat stiff blade which I prefer. For the price I'm blown away with the quality.

Absolutely great knife, I've worked in kitchens for over 20 year and have used many different brands of knives and this is at the top of my list for great quality knives,I've used this to de bone a few deer and have even used it as a skining knife and it doesn't disappoint in the kitchen or in the field

Our farm raises and butchers our own chicken and pigs. These knives work great for deboning, they even hold their edge for quite a while. Bought 4 of them because I like them so much.
