Can I exercise with this machine? Or is this just to test grip strength?

I do not use the GRIPX for exercise. It is used to measure grip strength in patients. It is, for me, more of a medical instrument than a gym tool.

What is the lowest grip strength this will pick up (I know other brands won't pick up below 10 lb)?

The minimum calculated grip strength is 10 pounds. And this dynamometer can also read the single-digit grip strength, such as 1 pound, 2 pounds or more. It will be comparison with standard grip strength when it reach 10 pounds or more.

Will the display stay on while you’re squeezing it for 2 mins?

You only need to squeeze it for 2 seconds. Don't think it would.
