Our children (4 and 2 1/2 yrs old) are allergic to milk and nuts so it is sometimes very hard to find foods they can eat (most breads have milk ingredients or are processed in a plant that also processes nut products). The recipes are for a wide selection of breads(and jams and other stuff - but we use it mainly for the bread) and they include recipes for breads that don't require milk products. The bread comes out great - leaves a delicious smell in the house, tastes great, and is cooked evenly. The machine is easy to operate (really, just turn on and follow prompts as necessary). It is also very easy to clean - just wipe! I bought it in the bundle - the oven mit is sturdy and prevents any burning. The handles on the measuring spoons/cups bent a little recently. Gluten free uses rice flour instead of wheat. The unit preheats, mixed and kneads and bakes the loaf. The only question is the baking time for gluten free. You may want to call zojirushi to see if they have a recipe they have tested. **Q: Does the bread machine make a lot of noise during the process of kneading and mixing the ingredients?** A: You can hear the kneading process, but it is not a lot of noise. Besides it is all well worth the noise. I love this machine, and have had beautiful results with each loaf. **Q: Can you make like broccoli in a cheese bread in this machine** A: I think you could make your dough in the machine then add the broccoli and cheese and bake it in your oven. I am making gluten free breads in this machine and it has customizable settings that allow me to cook this type of bread easily. You can make breads, meat loafs, cakes and more in this well made piece of equipment and I am impressed with the craftsmanship of this product. If you are going to make an investment in a good quality, beautiful piece of equipment for your kitchen, this is the way to go. On a side note, the accessories that come with are not really the best quality. The oven mit is nice but the cups and spoons are not a good metal.
