It's also very handy for setting over a wok and pouring another wok or pot full of oil and ingredients over it to strain out the oil. This strainer does exactly what I want it to do. It can easily scoop out all items from a wok full of hot oil, and the short handle is easy to use and manipulate. It's also very handy for setting over a wok and pouring another wok or pot full of oil and ingredients over it to strain out the oil. Many restaurants use this technique to quickly fry items then toss them back into the wok to finish the dish. This is very sturdy and well made, should last me for years and years.
