I want to use the mat to roll out pie crust and I am a total newbie.** A: I have the large size and totally recommend it. It's nice to have the extra room to put dough aside while still being able to roll. Also, a little side note. Make sure the underside of the mat is clean of any residue, i.e. dust from flour or else it won't stick to the table. **Q: Will it move when rolling dough?** A: It never moves with rolling.
