What is this? Do I scoop ice cream with it?

This is not an IceCream scoop. This is for Sorbet.

Do you need two, or will one suffice? for reference, i'm looking to use on a bmw r1200gsa.

Once you break the bead on the tire, this tool is placed on the opposite side of the tire (from where you will be using your tire irons to pry off the tire), and the tool's function is keep the tire off the outer part of the rim and closer to the center of the rim, making it a bit easier to pry off the tire. If you have a tire stand, you can simply lean over the tire and push the tire down on the rim while you spoon the tire off the other side, otherwise the Bead Buddy certainly helps and only one is really needed.

Will it work on 21" wheels

I have a Triumph Tiger 800 with a 21 inch front wheel. Specifically they are 90/90-21. I just changed the tires front and rear on this bike and could not use the tool on the rear (150/70-17) and it woudl not work. On the front it did work but it was at its limit.
