Got this as a present for myself, however upon opening the box, you could feel the blade was not sharp and requires sharpening. Had trouble cutting into a brisket.

I am a professional Home and Personal Chef and teach cooking and knife skills as well. Knives for me are essential in my culinary toolbox and activities, and I am picky and critical. I have tested and reviewed MANY knives here on Amazon and elsewhere. I will praise those that deserve it and am highly critical of those that don't. What is most important to me is that the knives I use are for "cooking”…not "looking". Performance, construction, and ergonomics are the key metrics over aesthetics for honest critical reviewing. My original skepticism of this knife was the 3D Etching on the surface of the blade that is usually incorrectly called "Damascus". That being said, this particular knife alleviated my doubts and in testing, I have found the etching to actually have some use as described below. Long story short from the outset, this is an excellent boning/filet knife. The Tuo Knife Company is based in China, but unlike many of the other cheapo knife companies there, this one has done extensive research, designing, and manufacturing excellent knives that far outpace their local competition for excellence and value. The company has won significant awards for excellence in design, and one of their Chef's Knifes was awarded Knife of the Year in 2019. The company's products have been widely praised on many review sites online. This Boning/Filet knife is constructed of Japanese AUS-8 Steel. The properties of that steel are not exceptionally high, but the benefit is that, though the common use of a boning knife will generally require frequent edge maintenance and sharpening, this steel allows for a much more rapid return to razor sharpness with stone or another sharpener than higher-end steel that requires a lot of work to resharpen. This is a unique benefit for this particular style of knife. The bevel is set to 8-12 degrees that provide exceptional sharpness for the tasks the knife is designed for...like cutting around bones and filleting fish. The positives of the knife are numerous: * Superb design for ergonomics, making it feel comfortable and secure in hand while using * 3D etching actually assists in keeping vacuum at a minimum with no product sticking to the blade. This is not as effective as Granton Dimples are on larger knives but is great for this thin knife to assist in a similar fashion. * Medium flex is perfect for boning or butchering a chicken, and appropriate for most fish as well. * The handle is very ergonomic and comfortable to use over long hours. * The balance is located about 3/4" behind the bolster, which is appropriate for the blade type. * AUS-8 Japanese Steel is a very good choice for the steel used in this blade type * The bolster has a nicely sloping curve to the blade, making it very comfortable for pinch-grip use * The knife is a full tang with a single securing rivet and metal end-cap * Edge sharpness is razor sharp out of the box, and easily maintained (Use 8-12 deg bevel sharpeners)* * Overall weight is perfect for the purposes the knife is designed for. As with all culinary knives, this should only be hand washed and dried, and ever use in a dishwasher. As I have alluded in my opening paragraph, I am not impressed by aesthetics... rather concentrating on performance and design metrics for actual cooking when evaluating. Nonetheless, this IS a good-looking knife, but more importantly...it performs, and performs exceedingly well! I am happy to add this knife to my professional knife roll. It is clearly a winner and I am easily and comfortable giving it a high FIVE STAR rating. It really is one of the rare gems that I have had the opportunity to test, use and review. I can honestly and heartily recommend this knife and I find the price it is offered for a good and proper value. The item in the description has domascus steel details. The item that I got is just flat steel. I already returned it once thinking that this was simply a mistake. However upon ordering it again, low and behold the same flat steel knife was received.
