Good start for old style chicory blend coffee
This coffee with chicory comes vacuum sealed in a can which helps a good bit, though once it is opened it does lose flavor if not used soon. It appears to be a medium-dark roasted bean and the chicory gives it that warm, almost malted flavor that is hard to describe. The only chicory blend I can compare it to here so far from the coast in mid America is Luzianne which is more of a medium roast and not quite as aromatic as the Cafe du Monde brand when the packs are first opened. After a week or two open you really can't tell the difference. On the coast and fresh either one is much better. I'd suppose they first used chicory as a way of extending the expensive coffee beans during times of poverty but people people came to like the flavor, which is why some of us die hards still love it. One way we used to brew it was to start with twice as much compared to plain coffee in an old style recycling percolator and then overcook it. The resulting stuff which we used to call 'river coffee' was then mixed half and half with milk. Some of us used sugar and some didn't. With the modern coffee makers I just fill the Bunn filter, run water through and mix the product half and half with milk. Its not river coffee but it is flavorful and not at all skunky like so much of what is sold as gourmet coffee these days. (I don't know how some of the popular expensive coffee makers roast their coffee to make it smell exactly like a two day old skunk on the highway, but some people seem to like it.) The chicory in this can is a little bit lighter than the coffee but the granule size is uniform and not powdery. People ask, "What is chicory"? Chicory is the root from a flower the French used to grow in their gardens, the French equivalent to a dandelion with blue flowers. It is dried and roasted, ground like coffee. I have heard that originally people roasted it in frying pans; I've watched south American housewives doing that with regular coffee and there is an art to it.

Great for strong coffee lovers
If you love strong coffee, this is the one to get. It has deep roasted flavor. It does taste different that coffee without chicory, however, you can add more or less cream to capture the taste you want. The only thing missing are the warm beignets.

The only option when making Vietnamese coffee (Cafe Sua Da)
This is my go-to coffee when making Vietnamese coffee. It has a lovely, rich taste and only needs condensed milk to be perfect. I usually use a slow coffee dripper directly into a cup with condensed milk. After it finishes dripping, I mix it with the condensed milk and add ice. It's the perfect pick-me-up for the morning or afternoon. Be warned, if you use a slow drip coffee maker, it will be STRONG.

Why Whole Foods?
This is great Cajun coffee. I love the deep, rich flavor. But now I must order from Whole Foods! The price is higher, there is a delivery fee if under a certain amount, also a Whole Foods fee. I will & have chosen another brand that is less expensive, even though I love this brand.

This is excellent coffee. The chicory adds a unique flavor to it. It also brews very strong, and I like strong coffee...so a can stretches out. Bought in Oct 2024 for roughly 16.50 a can, at the time that was about a 1$ a can cheaper than buying direct from CAfeDuMonde in the states and shipping by UPS ground to Canada.
