What colour should they be when burning?

They do not actually burn. Rather they contain an inflamable gas designed to be fed to a blowtorch suitable for combustion, in order that it produces a flame. This flame will be blue if all is correct. But as with any flame of this type you should really know what you are doing to be safe.

Can I use these for a Coleman outdoor stove rather than the Coleman propane gas cylinders?

I rather doubt it. I believe the gas mix burns at a far higher temperature and intensity, so probably unsafe. I am not sure if the connection is the same anyway.
